It is pretty obvious how to manually add an entry to the egmaterials.xml file but has anyone compiled a more extensive list of materials that could replace the old list? Also, are the dimensions of the parameters all in MKS units?

I don't know whether there are such attempts. Personally I've sometimes made tailored list for limited use where material parameters are known.
Yes, it would be risky to combine MKS (aka SI) units and non-MKS ones. Of course if you would make your tailored materials you could basically have some other unit system but that should the relate also the Constants, BCs, ICs etc.
